Eggs-travaganza
Easter means bunnies, chocolate, and eggs galore. But after the eggs have been dyed and hunted, what then? Here are some fun recipes for your 4 dozen boiled eggs when all the fun is over.
- Deviled eggs! You’ve got a bunch of beautifully colored eggs, so you might as well add some mayonnaise, pickles, mustard, and paprika to those eggs yolks and go to town.
- Salad topping. Eggs are a great way to add non-meat protein to your salad lunch. Throw together some spinach leaves, tomatoes, and any other veggies you like into a bowl with chopped eggs, top with your favorite dressing, and you’re good to go!
- Egg salad. Similar ingredients to deviled eggs make this an excellent partner recipe.

- Cobb Salad. A good, ol’ Cobb salad contributes fats that are good for you in the form of olive oil and avocado. Eggs, some shredded chicken breast, and maybe even a little bit of bacon crumbles help make the salad filling. A base of salad greens (try something other than iceberg lettuce to get the best nutrition), tomatoes, and cucumbers help satify you daily recommendation of vegetables. - Veggie Egg Salad. If you’re looking for a good way to get more vegetables on the table and use up some of those Easter eggs, try a veggie egg salad. Take your usual egg salad recipe and incorporate some chopped carrots, celery, and green onions. Eat it on whole grain crackers or bread, or as a topping over mixed salad greens.
- Breakfast Burrito. Typically done with scrambled eggs, boiled eggs can be chopped up and mixed with beans, rice, cheese, and some fresh vegetables like colorful peppers, tomatoes, onions, or zucchini for a filling breakfast hitting on all of the food groups when put on a whole grain tortilla.
- Fried Rice or Pad Thai. Cook like usual and add the boiled eggs, chopped up, in at the end, just long enough for them to get warm, but not so long that they become rubbery.
- Straight Up. You can always just enjoy boiled eggs straight! Peel, add a little bit of salt and pepper, and you have an easy, nutritious snack.
